I tend to work best under pressure. I know exactly how much energy to exert and when to do it. I will plan ahead in my minds eye exactly what needs to happen first...and so on. It sometimes feels like if I have too much time I waste it doing nothing. The only problem with that philosophy is that there are times you let too many things pile up to the point the lines blur a bit and you make mistakes or important things may slip through the cracks occasionally. This cake I made tonight is a lot like that I feel. I baked the cakes in a hurry. I probably didn't wait long enough for them to cool. In fact, while I was frosting it, I had to open the door to cool down the homemade butter cream frosting made with Bailey's so it would adhere to the sides of the cake better. The frosting is creamy and decadent and the perfect companion to my rugged and manly cake. It's so good I am afraid there may be a bit of a scuffle to see who gets the first taste. So grab a fork and join the scrum.
The cake is simply two boxes of your basic white divided, half of it dyed green with food coloring. I used 8 inch pans and simply alternated the colors in a "rugby stripe" pattern.
Frosting is simply one cup softened butter to four cups powdered sugar beaten until creamy and you then add three tbsp Bailey's. Frosts 24 cupcakes.
