I feel like one of the best ways to hydrate on a hot afternoon is to partake in the classic "Icee". Crisp and refreshing, with a myriad of flavors to choose from, it is the quintessential childlike summer treat that can be enjoyed well into adulthood. Absent the classic scarlet plastic utensil and inverted paper cone, one would assume that it risks the loss of the playfulness of our youth. Guess again. Made with your average every day bottle of champagne, this sweet treat was a perfect end to a very busy weekend that left me well...chilled.
Juice of one lemon, 1 cup water, 1/4 cup granulated sugar, 1 tbsp liquid glucose (light corn syrup), 1 cup champagne.
Combine all ingredients except the champagne in a saucepan, stir gently until the sugar dissolves. Bring to a boil and then remove from heat and allow to cool completely. Then add the champagne. Freeze in an airtight container for 1-2 hours or until it's a slushy consistency. Stir and break it apart into crystals. Freeze for an additional 2-3 hours or until firm. Cover for storing.
When you're ready to serve let it soften a bit at room temperature (15 min or less) and then garnish with either fresh mint leaves as you see here or lemon wedges. I filled the glasses and then refroze them so that the glasses came out frosty. Makes enough to serve four.
